As part of Winterlicious 2012, the Pegasus Hospitality Group takes our guests through a guided tour of their plate and palate. Our goal is to “Uncork” the myths behind how and why you pair wines with cuisine when dining. The goal is to take the rules out of wine pairing and show the many different ways of how a pairing normally not considered viable, can often be interesting and good.
This is a fun, interactive and communal dining experience at Casa Loma, which will guide guests through the discovery of wine pairing. Guests will ultimately walk away realizing that they each have a discerning palate, and that it will probably differ from the person sitting next to them, and that’s ok, in fact, that is the point. We plan to uncork the myths behind the belief of having to pair only certain wines with certain foods. The “tour” of your plate and flights of wine presented at each course will introduce the guest to the “complimentary contradictions” of wine and cuisine. With a preset locally produced 4 course menu, and meticulously thought out local wine flights,(and a couple of surprise beverages thrown in), each guest will begin to strategically pair wines with foods. We will demonstrate that the flavours of the foods can both contradict and compliment the wine selections, and both can be good. Taking a sweet Reisling and pairing it with something salty, can be entirely appealing, as will pairing it with the sweetness of a rich dessert. In the end, it will be up to the guest to navigate which combinations are most appealing, knowing that there is no right or wrong and thereby dispelling the myths of wine pairing.
We believe that the days of white wine with fish and red wine with meat have disappeared. There is of course a fine art to pairing wine which is to be respected; however our goal here is to attract those who are not sommeliers, to have an experience that will allow them to discover that “complimentary contradictions” can make sense. In the end it’s up to you. We are even going to throw in a few "discovery" beverages into the flights, some cool unexpected pairings, just to get you thinking and tasting outside the box. You would never think that these "discovery" products are produced in Ontario.
The atmosphere will be fun and interactive; guests will be sitting at tables of 6, as they gather on a journey that will end in perhaps discovering one’s palate in a way you never thought possible.
The only rules are; taste the wine and the food, if you like it, it’s good. If you don’t know the difference between a Cabernet and a Pinot Noir, it really doesn’t matter, what matters in the end is that wine and food always tastes better when shared with others.
The four course menu will be a wholesome, rustic, gourmet meal – another contradiction in terms!

On March 26, people from around the globe are asked to wear purple and spread the word about epilepsy. The CN Tower in Toronto, Niagara Falls will illuminate their buildings in purple to showcase their support.
Why purple?
Lavender is the international colour and flower for epilepsy.Lavender is a solitude flower, and to those living with epilepsy it symbolizes isolation and seclusion. They often are lonely and
withdrawn from society for fear of stigma and discrimination. Did you know 1 in 100 students have epilepsy?
Each day, an average of 42 Canadians learn that they have epilepsy and about 60% of new patients are young children and senior citizens.
Epilepsy affects about 60 million people worldwide.
That's more than multiple sclerosis, cerebral palsy, muscular dystrophy and Parkinson's disease combined.
EPILEPSY CURE INITIATIVE (ECI)is a not for profit incorporated organization founded by parents of a child with uncontrolled seizures, inspired by life experiences and fuelled by a burning desire to make a positive difference for people with epilepsy here and now. ECI is dedicated to creating awareness and
understanding of epilepsy, bringing an end to misconceptions and fear of the disorder, as well as to discrimination against people with
epilepsy. ECI is also dedicated to promoting ketogenic diet therapies,funding epilepsy research, and educating the public about the urgent
need for increased efforts in epilepsy research to advance new treatments that offer better seizure control and fewer side effects. As well, ECI is advocating for a more effective and improved formalized epilepsy care system being brought to Canada.
